Preparation and Cooking Time: 1-hr
Ingredients (for 4 pax)
- 1 cup of glutinous rice (wash & soak for at least 6 hrs)
- 300g chicken leg boneless (cut into small pcs)
- 5 pcs dried Chinese mushroom (soak & cut into smaller pcs)
- 1 tbsp dried shrimp
- 5 cloves garlic (chop)
- 5 cloves shallot (chop)
- 1 stalk spring onion
- 100g peanuts
- Oyster sauce
- Cooking oil
- Dark soy sauce
Step by Step Cooking Method
- Add a tbsp of cooking oil on a heated pan
- Add in the peanut stir fry. Scoop up the peanuts when it turns slightly brown and set aside
- Marinate chicken pieces with cornflour, light soy sauce, oyster sauce, mirin & pepper
- Marinate the mushroom with oyster sauce
- Wash & soak dried shrimps for 5-min then dry it with kitchen towel paper
- Heat up the skillet with 2 tbsp of cooking oil
- Sautee the chopped shallots & garlic and add in the marinated mushroom, stir fry for 2-min and add in the marinated chicken pieces
- Stir-frying the mixture until the chicken is about to cook then add in the glutinous rice and continue to fry. Add 1 tbsp of light soy sauce. You may add in 0.5 tsp of dark soy sauce and stir fry for a min
- Transfer the mixture to the steaming dish. Add a spoonful of water to the rice mixture and make sure it is moist with water. Do not cover the mixture with water else your rice will turn out soggy
- Put in the dish into the skillet of boiling water and steam for 25min. Garnish with the spring onions & peanuts and ready to serve
